Even though by the calendar summer has officially ended and
fall has begun, that doesn't mean it's much cooler in some parts of the
country. If it's still warm in your neck of the woods, try out some of
these frozen drinks to cool down for autumn.
Frozen Coconut Pineapple Margarita
A heavenly marriage of a pina colada and the refreshing tequila
snowcone, the frozen coconut pineapple margarita is easy to make. Blend
a 10-ounce can of frozen pina colada mixer concentrate, 10 ounces of
tequila, 5 ounces of pineapple juice, and 7 cups of ice. If you have a
small blender, cut the quantities in half. Before pouring, rim the glass
with coarse salt and garnish with pineapple and lime wedges.
Frozen Irish Coffee
Frozen hot chocolate has nothing on this magical blend. Pour in
a blender 2 cups of ice, 4 ounces of cold espresso, 2 ounces of Kahlua
or Tia Maria, 1.5 ounces of Irish Whiskey, and two scoops of vanilla ice
cream. Blend until smooth, and garnish with a generous dollop of
whipped cream and a sprinkling of shaved dark chocolate.
Frozen Sangria
Create a knee-buckling frozen sangria with a pint of Talenti
Roman Raspberry sorbetto and another pint of Talenti Blood Orange. Place
the sorbetto in a blender, add the juice of half a lime, 1/2 bottle of
inexpensive cabernet sauvignon, and 1/4 cup of mixed berries, such as
blackberries and raspberries. Blend till creamy. Pour the mixture into a
stemless wine glass and garnish with lime slices or berries for the
finishing touch.
Frozen Waterberry Batida
A refreshing blend of an American summer favorite and Cuca
Fresca Cachaca, Brazil's sugar cane-based national spirit, the frozen
waterberry batida chills you out ever so elegantly. In a blender, place 2
cups of seedless watermelon chunks, 6 chopped frozen strawberries, 2
ounces condensed milk, and 1 tablespoon of superfine sugar. Add 2 ounces
of Cuca Fresca Cachaca and 1.5 cups of crushed ice, and blend until
smooth. Pour into Cosmopolitan glasses and enjoy.
Peach and Honey Sangria Slush
This beautiful peach and honey sangria slush is a refreshing
and unexpected cooler. In a blender, mix 1 cup cold Riesling (or
favorite white wine), 2 tablespoons Grand Marnier, 2 tablespoons peach
liqueur, 1 tablespoon fresh lime juice, 1 tablespoon fresh orange juice,
and 1 tablespoon honey. Add 2 cups frozen peaches. Blend until smooth,
and pour into margarita glasses or Mason jars.
Jack and Coke Slush
Any cocktail that works on the rocks is a summer sensation when
frozen. To make a grown-up slush, combine in a large bowl two cans of
cold regular or diet Coca-Cola, 6 ounces of limeade concentrate, and 6
ounces of chilled Jack Daniels (or your favorite bourbon). Whisk
thoroughly, cover, and freeze overnight. When ready to serve the next
day, use a pastry blender to break up the ice and finish with a whisk.
Pour the slush into Mason jar glasses and slurp up.
Frozen Wine Slush
Tart, sweet, and refreshing, wine slushies make very elegant
treats. Puree in a blender 1 bottle of white Zinfandel and 1 cup of
frozen mixed berries. Strain the combination, and pour it into a 9-inch
pie plate. Freeze it for half an hour, and scrape the frozen mixture
with a fork. Pour it into a glass, and let it rest for five minutes.
Serve with berry garnish.
Frozen Bloody Mary
To make an undiluted frozen Bloody Mary, freeze a wedged
vine-ripened tomato and the serving glasses for four hours. Then, blend
the frozen tomato pieces with 2 ounces vodka, 1/2 cup tomato juice such
as R.W. Knudsen organic juice, 1 teaspoon Worcestershire sauce, 1/2
teaspoon horseradish, juice of 1/2 lime, 1/2 teaspoon celery salt, and
fresh pepper to taste. For a savory rim garnish, moisten the glass with
lime juice and rim it with a mixture of sea salt, pepper, and celery
seed. Top with a lime wedge and a cucumber slice.
Frozen Butterbeer
To make an adult version of the beverage so popular among young
wizards in Harry Potter's world, blend 1.5 cups cream soda, 6
tablespoons butterscotch schnapps, and 2 cups ice until slushy. Pour
into frozen glasses and chill until ready to serve. To make the foamy
topping, combine in a small bowl 6 tablespoons heavy cream and 1
tablespoon butterscotch schnapps. Whisk with an electric mixer to create
a loose whipped texture. Spoon a dollop of the cream onto the
butterbeer and serve immediately.
Frozen Beer Margarita
Like a frozen tequila shot with a beer packed in one frosty
glass, the frozen beer margarita is a simple summer drink with a twist.
To make a batch, blend until smooth 1 cup lime juice, 1/4 cup orange
juice, 3/4 cup tequila, 1/2 cup triple sec, 3 tablespoons powdered
sugar, and 1 cup ice. Pour the mixture into a large pitcher and add one
bottle of Corona beer. Rim margarita glasses with sea salt, pour, and
kick back.
